Dear Riccardo,
The epoch data for AM Tau in the more information for page of Guide shows that the coordinates have September 1982 as the epoch. Since the star is close to the ecliptic the coordinates could be off by the amount you found in your observations due to precession in the past 22+ years.

Subject: [guide-user] Variable position
Yesterday night I prepared chart for the observing session as usual
with Guide8 but AM Tau was eastern of about 35 arcsec as compared to
circle marking the variable supposed position. In the first, I did
photometry with the wrong star since a fainter star, not shown in
Guide, does exist in that position. After I got a flat curve, I
realized that the variable star was offset. Why variables' circle are
offset from the actual variables' position? How can I overcome this
problem?
