This is because 'color' information is derived from 'color' photometry info available for brighter stars only (if we stay within catalogues available directly on Guide's CD datasets). Just zoom out to get wider field of view and you will find more and more colored stars. Faint GSC stars have no such color info and so are displayed as white or green-coded according to the 'non-star' info.
